  • 1 cup rolled oats
  • 1 cup crispy brown rice cereal
  • 1/2 cup natural peanut butter
  • 1/2 cup maple syrup
  • 1/4 cup cocoa powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Method
 

  1. In a large mixing bowl, combine the rolled oats, crispy brown rice cereal, cocoa powder, and salt.
  2. In a separate microwave-safe bowl, mix the peanut butter, maple syrup, and vanilla extract. Microwave for about 30 seconds, then stir until smooth.
  3. Pour the peanut butter mixture over the dry ingredients and mix until well combined.
  4. Fold in the dark chocolate chips.
  5. Line an 8x8-inch baking dish with parchment paper. Press the mixture firmly into the dish in an even layer.
  6. Refrigerate for at least 1 hour to set.
  7. Once set, cut into bars and enjoy.
