Step-by-Step Instructions for One Pot Irish Chicken
  1. Preheat your oven to 400°F (200°C).
  2. Cook the bacon in the skillet over medium heat until crispy and golden brown, about 5-7 minutes. Set aside on paper towels.
  3. Add the chicken pieces to the skillet, skin side down, and sear for 4-5 minutes on each side until golden brown. Set aside with the bacon.
  4. Sauté chopped onions in the leftover fat until translucent, about 3-4 minutes.
