Ingredients
  

For the Chicken Marinade
  • 1 pound boneless skinless chicken thighs sliced into bite-sized pieces
  • 1 teaspoon ground cumin or substitute with coriander
  • 1 teaspoon ground coriander or extra cumin if necessary
  • 1 teaspoon paprika use smoked paprika for a smoky flavor
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon turmeric optional
  • 1/2 teaspoon ground cardamom garam masala can substitute
  • 1/2 teaspoon chili flakes adjust based on spice tolerance
  • 2 tablespoons lemon juice fresh juice is best
For the Cooking Base
  • 2 tablespoons olive oil can use any vegetable oil
  • 1 medium onion chopped
  • 2-3 cloves garlic minced
For the Rice and Liquid
  • 1.5 cups long grain rice uncooked
  • 3 cups chicken stock hot
For Garnish
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon dried dill

Method
 

Cooking Instructions
  1. Prepare the chicken by cutting the thighs into bite-sized pieces, and marinate with spices for 15 minutes.
  2. In a frying pan over medium-high heat, add olive oil and sear chicken for 3-4 minutes on each side until golden brown.
  3. Remove chicken from the pan, and sauté onion for 2-3 minutes, then add minced garlic for another minute.
  4. Add uncooked rice to the pan, stir for 1 minute, then pour in chicken stock and return the chicken.
  5. Cover and simmer on low heat for 12 minutes without stirring.
  6. Fluff rice with a fork, season as necessary, and garnish with parsley and dill before serving.
  7. Serve with pita or salad as desired.
