Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a small bowl, whisk together the orange juice, honey, soy sauce, Dijon mustard, minced garlic, and grated ginger until well combined.
Season the salmon fillets with salt and pepper on both sides, then place them skin-side down on the prepared baking sheet.
Brush the orange glaze generously over the top of each salmon fillet, reserving some for later.
Drizzle olive oil over the salmon fillets.
Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
In the last 2 minutes of baking, brush the salmon with the reserved glaze for extra flavor.
Remove from the oven and let it rest for a couple of minutes. Garnish with chopped green onions before serving.
