Ingredients
  

  • 2 pounds baby potatoes halved
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine the halved baby potatoes, olive oil, garlic powder, onion powder, rosemary, thyme, salt, and black pepper. Toss until the potatoes are evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, cut side down for extra crispiness.
  4. Roast in the preheated oven for 25 minutes, then remove from the oven and sprinkle the grated Parmesan cheese over the potatoes.
  5. Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until the potatoes are golden brown and crispy.
  6. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
