- Melt the Base Ingredients: In a large pot over medium-low heat, combine ½ cup of salted butter with 1 cup of smooth peanut butter. Stir gently until melted and creamy, about 3-5 minutes.
- Incorporate the Marshmallows: Add 10 oz of mini marshmallows to the melted peanut butter mixture, stirring constantly for about 2-3 minutes until glossy.
- Combine with Cornflakes: Fold in 7 cups of cornflakes until each flake is coated. Optionally, add 1 oz of mini marshmallows and ⅓ cup of peanut butter chips.
- Form the Cookies: Drop about 10 balls onto a parchment-lined baking sheet, flattening each to about 1 inch thick. Let set in a cool area.
- Drizzle for Finish: Melt 2 tbsp of peanut butter chips with ½ tsp of oil in a microwave-safe bowl. Drizzle over cooled cookies.
- Allow to Set: Let cookies sit at room temperature for 20-30 minutes until slightly firm.
