Baking Process
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar in a mixing bowl for 3-5 minutes until light and fluffy.
- Add the egg and vanilla extract to the creamed mixture, and mix until combined for 1-2 minutes.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
- Scoop out about 1½ tablespoons of dough, roll it into balls, flatten slightly, and place on lined baking sheets.
- Top each disk with a pineapple ring, pressing gently to adhere.
- Sprinkle a little granulated sugar over each pineapple ring for added sweetness.
- Bake for 12-14 minutes until the edges are golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
