Cookie Dough
  • 1 cup Unsalted Butter softened
  • 1 cup Granulated Sugar reduce by 2–3 tablespoons if desired
  • 1 large Egg
  • 1 teaspoon Vanilla Extract substitute with almond extract if desired
  • 2 cups All-Purpose Flour gluten-free blend can be used
  • 1 teaspoon Baking Soda
  • 1/4 teaspoon Salt omit if using salted butter
Topping
  • 1 can Canned Pineapple Rings well-drained
  • 1 tablespoon Additional Sugar for Sprinkling for visual appeal

Method
 

Baking Process
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar in a mixing bowl for 3-5 minutes until light and fluffy.
  3. Add the egg and vanilla extract to the creamed mixture, and mix until combined for 1-2 minutes.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
  5. Scoop out about 1½ tablespoons of dough, roll it into balls, flatten slightly, and place on lined baking sheets.
  6. Top each disk with a pineapple ring, pressing gently to adhere.
  7. Sprinkle a little granulated sugar over each pineapple ring for added sweetness.
  8. Bake for 12-14 minutes until the edges are golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
