- In a mixing bowl, combine well-drained ricotta cheese, finely chopped pistachios, honey, and a pinch of salt. Mix until smooth, about 2–3 minutes.
- Take spoonfuls of the mixture and form them into small balls, or pour into a silicone mold.
- Line a tray with parchment paper and place the formed bites on it, then chill in the refrigerator for at least 30 minutes.
- Once chilled, drizzle a little more honey over each bite and serve on a platter.
