Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup unsalted butter cold and cubed
  • 3/4 cup buttermilk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour for gravy
  • 2 cups whole milk
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 450°F. In a large bowl, whisk together 2 cups of flour, baking powder, salt, and baking soda.
  2. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Stir in the buttermilk until just combined. Do not overmix.
  4. Turn the dough onto a floured surface and gently knead it a few times until it comes together. Pat it into a 1-inch thick round.
  5. Cut out biscuits using a biscuit cutter or a glass and place them on a baking sheet. Bake for 12-15 minutes or until golden brown.
  6. While the biscuits are baking, cook the sausage in a large skillet over medium heat until browned and crumbled.
  7. Stir in 1/4 cup of flour and cook for 1-2 minutes. Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with salt and pepper to taste.
  8. Serve the warm biscuits topped with the sausage gravy.
