Step-by-Step Instructions
  1. In a large bowl, whisk together tahini, za’atar, red wine vinegar, fresh lemon juice, minced garlic, salt, and pepper until fully blended into a creamy sauce.
  2. Reserve a small amount of the marinade for later. Coat the chicken thighs generously with the remaining marinade and refrigerate for at least 1 hour.
  3. Preheat your oven to 400°F (200°C). This temperature ensures even cooking.
  4. Line a baking sheet with parchment paper and place the marinated chicken thighs on it, spaced apart. Drizzle reserved marinade over the top.
  5. Roast the chicken thighs for 35-40 minutes until golden brown and internal temperature reaches 165°F (74°C).
  6. Let the chicken rest before garnishing with parsley and serving with lemon wedges.
