  • 8 ounces cream cheese softened
  • 1/2 cup heavy cream or substitute with fat-free half and half
  • 1 cup cheddar cheese freshly grated

  • 1/4 cup fresh cilantro for garnish
  • 1 medium sliced avocado adds creaminess

Cooking Steps
  1. Heat oil in a large pot over medium-high heat, then add ground beef, onion, and bell pepper. Sauté for 5-7 minutes until beef is browned.
  2. Stir in minced garlic and cook for an additional minute. Pour in beef broth, diced tomatoes, salsa, and taco seasoning. Mix well.
  3. For Instant Pot, secure the lid and set to high pressure for 2 minutes. For stovetop, simmer on low heat for 30 minutes.
  4. Stir in cream cheese, heavy cream, and cheddar cheese. Mix until creamy and smooth.
  5. Ladle soup into bowls and garnish with toppings like cilantro, avocado, sour cream, and tortilla chips.
