Ingredients
  

  • 1 pound boneless skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 cup steamed broccoli florets
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • ¼ cup shredded cheddar cheese
  • 2 tablespoons fresh cilantro chopped
  • Juice of 1 lime

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper. Cook for about 7-10 minutes, or until the chicken is cooked through and no longer pink in the center.
  2. While the chicken is cooking, prepare the brown rice according to package instructions if not already cooked.
  3. Once the chicken is done, assemble the bowls. Start with a base of brown rice, then top with the cooked chicken, steamed broccoli, cherry tomatoes, and sliced avocado.
  4. Sprinkle shredded cheddar cheese and chopped cilantro over the top, then drizzle with lime juice before serving.
