Ingredients
  

For the Meatballs
  • 1 pound Ground Meat beef, turkey, or plant-based
  • 1/2 cup Breadcrumbs regular or gluten-free
  • 1 large Egg or a flax egg for vegan option
  • 2 cloves Garlic minced
  • 1 medium Onion diced
  • 1/4 cup Parmesan Cheese or nutritional yeast for dairy-free
  • 1/4 cup Fresh Parsley chopped
  • 1 teaspoon Salt
  • 1 teaspoon Pepper freshly cracked
For the Stew
  • 2 tablespoons Olive Oil for sautéing
  • 2 medium Carrots chopped
  • 2 stalks Celery chopped
  • 2 medium Potatoes diced, Yukon Gold or red
  • 1 can Canned Tomatoes 14.5 oz
  • 4 cups Beef Broth or vegetable broth for vegetarian
  • 2 leaves Bay Leaves
  • 1 tablespoon Fresh Thyme or dried thyme
  • 1 tablespoon Worcestershire Sauce optional

Method
 

Prepare Meatballs
  1. In a large bowl, combine ground meat, breadcrumbs, minced garlic, diced onion, egg, Parmesan cheese, chopped parsley, salt, and pepper. Mix until just combined and form into meatballs.
Bake Meatballs
  1. Preheat your oven to 400°F (200°C) and bake meatballs on a lined baking sheet for 15-20 minutes until browned.
Sauté Vegetables
  1. Heat olive oil in a large pot over medium heat. Add carrots and celery, sauté for 5-7 minutes.
Combine Ingredients
  1. Add diced potatoes and canned tomatoes to the pot. Stir and sauté for 3-4 minutes before adding beef broth.
Simmer
  1. Introduce bay leaves, thyme, Worcestershire sauce, and baked meatballs. Bring to a boil and then simmer for 30-40 minutes.
Season and Serve
  1. Taste and adjust seasoning. Remove bay leaves before serving and garnish with fresh parsley.
