Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Chop the sweet potatoes, onion, green pepper, and garlic into small, uniform pieces.
  3. Lightly grease a 9x13-inch casserole dish with cooking spray or avocado oil.
  4. In a large skillet, heat avocado oil over medium heat. Add onion and green pepper, sauté for 3-4 minutes, then add sweet potatoes for another 5 minutes. Finally, add garlic for the last minute.
  5. Spread the sautéed vegetable mixture evenly across the casserole dish.
  6. In the same skillet, add the turkey sausage and cook until browned, about 5-7 minutes.
  7. Once browned, place the sausage on top of the sautéed vegetables in the casserole dish.
  8. In a mixing bowl, whisk together eggs, milk, thyme, salt, pepper, and shredded cheese until smooth.
  9. Pour the egg mixture over the sausage and vegetable layers in the casserole dish, ensuring it seeps in well.
  10. Place the casserole in the oven and bake for 40-45 minutes, checking for doneness.
  11. Cool the casserole for about 15 minutes before serving.
