- Preheat a large non-stick skillet over medium heat for about 5 minutes.
- Spread 1 tablespoon of unsalted butter on one side of each slice of sourdough bread.
- Place one slice of bread butter-side down into the hot skillet. If using, spread Dijon mustard over the unbuttered side. Add roast beef and cheddar cheese.
- Carefully place the second slice of bread on top, buttered side facing up. Cook for 3-5 minutes until golden-brown.
- Flip the sandwich using a spatula and cook the other side for another 3-5 minutes until crispy and cheese melts.
- Remove from skillet, cool for a minute, then slice in half. Garnish with arugula or spinach if desired.
