Method
 

Step-by-Step Instructions
  1. Preheat a large non-stick skillet over medium heat for about 5 minutes.
  2. Spread 1 tablespoon of unsalted butter on one side of each slice of sourdough bread.
  3. Place one slice of bread butter-side down into the hot skillet. If using, spread Dijon mustard over the unbuttered side. Add roast beef and cheddar cheese.
  4. Carefully place the second slice of bread on top, buttered side facing up. Cook for 3-5 minutes until golden-brown.
  5. Flip the sandwich using a spatula and cook the other side for another 3-5 minutes until crispy and cheese melts.
  6. Remove from skillet, cool for a minute, then slice in half. Garnish with arugula or spinach if desired.
