  • 2 tablespoons soy sauce low-sodium preferred
  • 1 tablespoon oyster sauce optional
  • 1 teaspoon sesame oil to finish
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, freshly grated
  • 2 tablespoons vegetable oil high smoke point
  • salt and pepper to taste

  • 2 cups cooked rice or noodles

Method
 

Step-by-Step Instructions
  1. Prepare all ingredients: peel and devein shrimp, trim and cut asparagus, and slice mushrooms.
  2. In a bowl, marinate shrimp with 1 tablespoon of soy sauce and a pinch of salt for about 10 minutes.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
  4. Sauté minced garlic and grated ginger in the hot oil for about 30 seconds.
  5. Add marinated shrimp to the skillet and cook for 2-3 minutes until pink and opaque.
  6. Stir in cut asparagus and sliced mushrooms, sauté for an additional 3-5 minutes.
  7. Pour in remaining soy sauce and optional oyster sauce, stir well and heat for 1-2 minutes.
  8. Adjust seasoning with salt and pepper as needed.
  9. Drizzle sesame oil over the stir-fry and gently incorporate.
  10. Serve hot over cooked rice or noodles.
