Ingredients
  

  • 8 ounces cheese tortellini
  • 1 pound large shrimp peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon red pepper flakes optional
  • 1 cup cherry tomatoes halved
  • 1 cup spinach leaves
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish optional

Method
 

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque.
  4. Stir in the cherry tomatoes and spinach, cooking for an additional 2 minutes until the spinach wilts.
  5. Add the cooked tortellini to the skillet and toss everything together gently. Sprinkle with grated Parmesan cheese and mix until well combined.
  6. Serve immediately, garnished with fresh basil if desired.
