Step-by-Step Instructions
  1. In a small bowl, sprinkle unflavored gelatin over 2 tablespoons of water and let it sit for about 5 minutes.
  2. In a medium saucepan, combine 1 cup of heavy cream, 1 cup of whole milk, ½ cup of granulated sugar, and 2 tablespoons of instant espresso powder. Warm over medium heat, stirring gently for about 5 minutes until the sugar has fully dissolved.
  3. Remove the saucepan from the heat. Quickly whisk in the bloomed gelatin until completely dissolved, then stir in 1 teaspoon of vanilla extract.
  4. Transfer the mixture through a fine sieve into another bowl for an ultra-smooth texture.
  5. Carefully pour the smooth mixture into individual ramekins or serving glasses, cover with plastic wrap, and refrigerate for at least 4 hours.
  6. When ready to serve, dip the bottom of each ramekin in warm water for about 10 seconds to loosen it, invert onto a plate, and garnish as desired.
