Ingredients
  

  • 2 ¼ teaspoons active dry yeast 1 packet
  • 1 cup warm water 110°F
  • 1 tablespoon granulated sugar
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter melted
  • 1/4 cup baking soda
  • 1 large egg beaten
  • Coarse sea salt for sprinkling

Method
 

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt.
  3. Add the yeast mixture and melted butter to the flour. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until smooth.
  5. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for 1 hour or until doubled in size.
  6. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  7. In a large pot, bring 8 cups of water and baking soda to a boil.
  8. Punch down the risen dough and divide it into 8 equal pieces.
  9. Roll each piece into a rope about 1 inch thick, then cut into 1-inch pieces.
  10. Carefully drop the pretzel bites into the boiling water for about 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
  11. Brush the tops with beaten egg and sprinkle with coarse sea salt.
  12. Bake for 12-15 minutes or until golden brown. Allow to cool slightly before serving.
