Ingredients

For the Crackers
  • 8 oz Cheddar Cheese Sharp cheddar is ideal, but can substitute with hard cheeses like parmesan or asiago.
  • 1 cup Sourdough Discard Active starter can also be used.
  • 4 tbsp Unsalted Butter For dairy-free, use cold vegetable shortening.
  • 1 cup All-Purpose Flour whole wheat flour can provide a nuttier flavor.
  • 1 tsp Garlic Powder Optional; can omit if avoiding spices.
  • 1 tsp Onion Powder Optional; can leave out if preferred.
  • 1 tsp Salt Adjust according to taste; consider adding flaky salt on top.

Equipment

  • Food processor
  • Baking sheet
  • Parchment paper
  • Pizza Cutter
  • toothpick

Method

Step-by-Step Instructions
  1. In a food processor, combine the cheddar cheese, sourdough discard, unsalted butter, all-purpose flour, garlic powder, onion powder, and salt. Pulse until the mixture resembles wet sand, about 30 seconds.
  2. Transfer the dough onto a clean surface and shape it into a disc. Wrap it tightly in plastic wrap and refrigerate for at least 30 minutes, or up to 2 days.
  3. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Roll out the chilled dough to about 1/16-inch thickness and cut into squares.
  4. Lightly sprinkle the cut dough squares with flaky salt for extra flavor. Bake for 18-22 minutes, or until golden brown.
  5. Once baked, allow Sourdough Cheez Its to cool on the baking sheet for about 10 minutes before transferring them to an airtight container.
