Step-by-Step Instructions
  1. Prepare Marinade: Whisk together soy sauce, honey, lime zest, lime juice, garlic, ginger, vegetable oil, Sriracha, and kosher salt. Set aside half for basting.
  2. Marinate Chicken: Pour the remaining marinade into a bag with chicken thighs. Massage to coat and marinate for 30 minutes at room temperature or 6-12 hours refrigerated.
  3. Preheat Grill: Clean and oil grill grates, preheat to medium-high (about 400°F / 200°C). Soak wooden skewers in water if using.
  4. Assemble Skewers: Remove chicken from marinade, pat dry, and thread onto skewers.
  5. Grill: Cook skewers on grill for 9-12 minutes, turning occasionally. Brush with reserved marinade during the last few minutes.
