- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk the flour, baking powder, and salt in a medium bowl until combined.
- Beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla and optional almond extract, then fold in the dry ingredients until a thick dough forms.
- Divide the dough and mix gel food coloring into each portion until desired colors are achieved.
- Chill the colored dough in the refrigerator for at least 30 minutes.
- Roll tablespoon-sized balls of dough in powdered sugar until coated, then place on the baking sheet.
- Bake for 10-12 minutes until tops crack and edges are set.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
