For the Filling
  • 1 cup Dried Cranberries or raisins or dried cherries for variety
  • 1/2 cup White Chocolate high-quality chocolate is essential
For the Frosting
  • 8 oz Cream Cheese a dairy-free alternative can also work
  • 2 cups Confectioners' Sugar
  • 2 tablespoons Orange Juice milk can be a handy substitute

  • 1/4 cup Roughly Chopped Dried Cranberries

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking pan with nonstick spray and parchment paper.
  2. Melt the unsalted butter in a medium saucepan over medium heat until browned, then cool for 10 minutes.
  3. Whisk together all-purpose flour, baking powder, and salt in a mixing bowl until well mixed.
  4. In a large mixing bowl, mix the cooled butter and light brown sugar until smooth. Add eggs, vanilla extract, and orange zest, mixing until combined.
  5. Fold the dry ingredients into the wet mixture until just combined, then add dried cranberries and chopped white chocolate.
  6. Spread the batter in the prepared pan and bake for 18 to 22 minutes, until edges are golden and center is set.
  7. Cool completely in the pan on a wire rack for 30 to 45 minutes.
  8. Beat cream cheese until smooth, then gradually add confectioners' sugar and orange juice until creamy.
  9. Spread the cream cheese frosting evenly over the cooled bars and sprinkle with chopped dried cranberries.
  10. Melt additional white chocolate and drizzle over the frosted bars.
  11. Chill the bars in the refrigerator for about 30 minutes before slicing.
  12. Serve chilled and enjoy!
