Preparation Steps
  1. Begin by patting down the halved and sliced English cucumbers with paper towels to absorb excess moisture. Allow them to rest for about 5 minutes while you prep the other ingredients.
  2. In a medium mixing bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice and zest, chili powder, cumin, paprika, and salt and pepper until smooth and creamy.
  3. In a large mixing bowl, combine prepared cucumbers, rotisserie chicken, drained sweet corn, cilantro, green onions, diced jalapeño, red onion, and red bell pepper.
  4. Pour the creamy dressing over the salad mixture and gently fold the ingredients together using a spatula.
  5. Transfer the salad into a serving bowl or individual dishes and refrigerate for at least 10 minutes before serving.
