Preparation Steps
- Begin by patting down the halved and sliced English cucumbers with paper towels to absorb excess moisture. Allow them to rest for about 5 minutes while you prep the other ingredients.
- In a medium mixing bowl, whisk together Greek yogurt, mayonnaise, minced garlic, lime juice and zest, chili powder, cumin, paprika, and salt and pepper until smooth and creamy.
- In a large mixing bowl, combine prepared cucumbers, rotisserie chicken, drained sweet corn, cilantro, green onions, diced jalapeño, red onion, and red bell pepper.
- Pour the creamy dressing over the salad mixture and gently fold the ingredients together using a spatula.
- Transfer the salad into a serving bowl or individual dishes and refrigerate for at least 10 minutes before serving.
