Instructions
  1. Wash and clean the fresh snow peas. Split each pea on one side, leaving the bottom intact.
  2. Blanch the snow peas in boiling water for 10 seconds, then transfer to ice-cold water to cool.
  3. In a mixing bowl, combine crab meat, chopped eggs, mayonnaise, horseradish, hot sauce, capers, and celery. Mix gently.
  4. Stuff each snow pea with the crab mixture, ensuring a generous heaping.
  5. Chill the stuffed peas for at least 30 minutes before serving for enhanced flavor.
