  • 2 Onions Red or yellow preferred
  • 1 teaspoon Sugar Can substitute with honey or maple syrup
  • to taste Salt & Pepper Adjust to preference
  • 1 tablespoon Balsamic Vinegar White balsamic can be used for a lighter touch
  • a few sprigs Fresh Thyme Dried thyme can substitute
Pastry
  • 1 sheet Puff Pastry Store-bought or homemade
Topping
  • 8 ounces Goat Cheese Feta or ricotta can be used as alternatives

Method
 

Steps
  1. Heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat in a large skillet. Add 2 sliced onions, 1 teaspoon of sugar, and a pinch of salt and pepper. Cook for about 15 minutes, stirring occasionally, until onions are caramelized.
  2. Stir in 1 tablespoon of balsamic vinegar and a few sprigs of fresh thyme to the caramelized onions. Cook for another 5 minutes until the mixture is jammy and glossy.
  3. Roll out a sheet of puff pastry on a floured surface and cut into rectangles about 3x4 inches. Place on a lined baking sheet.
  4. Distribute the caramelized onion mixture onto the pastry rectangles and crumble goat cheese on top. Add more fresh thyme if desired.
  5. Preheat oven to 400°F (200°C) and bake for 15 minutes or until golden brown.
  6. Let cool for a few minutes before serving warm.
