Ingredients
  

  • 1 pound salmon fillet skin removed and cut into 1-inch cubes
  • 1/4 cup hot honey or regular honey mixed with a pinch of cayenne pepper
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • Chopped fresh parsley for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the olive oil, hot honey, garlic powder, smoked paprika, salt, black pepper, and lemon juice. Whisk until well combined.
  3. Add the salmon cubes to the bowl and gently toss to coat them evenly with the marinade. Let them marinate for about 15 minutes for the flavors to meld.
  4. Arrange the marinated salmon bites in a single layer on the prepared baking sheet.
  5. Bake in the preheated oven for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Remove from the oven and let cool for a couple of minutes. Garnish with chopped parsley if desired before serving.
