  • 1/2 cup Red Onion or green onions for milder flavor
  • 1/4 cup Fresh Cilantro or parsley as replacement
  • 1 tablespoon Olive Oil any mild oil works

Step-by-Step Instructions
  1. Make the Marinade: Whisk together honey, lime juice, lime zest, garlic, cumin, salt, and pepper until smooth.
  2. Marinate the Chicken: Place chicken in a resealable bag, pour marinade, seal, and refrigerate for 30 minutes to 2 hours.
  3. Prepare the Rice: Rinse rice under cold water; combine with chicken broth and salt in a saucepan. Boil, then simmer for 15 minutes.
  4. Preheat the Grill: Heat the grill to medium-high (375°F). Grill chicken for 6–7 minutes on each side until cooked through.
  5. Mix the Avocado: Combine diced avocados, red onion, cilantro, and olive oil in a bowl. Toss gently.
