- In a large mixing bowl, combine the chopped smoked brisket, softened cream cheese, sharp cheddar cheese, and diced jalapeños. Add garlic powder, onion powder, black pepper, and salt to enhance the flavors. Mix thoroughly until the mixture is creamy and well-blended.
- Place an egg roll wrapper on a clean surface in a diamond shape. Spoon about two tablespoons of the prepared filling near the center. Brush the edges of the wrapper with water to help seal them, fold the bottom corner over the filling, tuck in the sides, and roll tightly to seal.
- In a heavy-bottomed pot, pour enough oil to reach a depth of 2-3 inches and heat over medium-high heat until it reaches 350°F (175°C).
- Carefully drop the egg rolls into the hot oil in small batches, frying each for about 3-4 minutes or until golden brown. Transfer to a wire rack to drain excess oil.
