- Boil salted water in a large pot. Cook gyozas or potstickers as per package instructions for 2-3 minutes.
- In a large pot, heat vegetable oil. Add garlic and ginger, stir for 30 seconds.
- Add chicken broth and coconut milk, stir. Add soy sauce, fish sauce, sesame oil, brown sugar, and red curry paste. Bring to a boil, then simmer for 5 minutes.
- Stir in lime juice and adjust seasoning. If you want more spice, add extra red curry paste.
- Place cooked gyozas in bowls, ladle hot soup over them, garnish with chives.
