Method
 

Step-by-Step Instructions
  1. Rinse the jasmine rice under cold water in a fine mesh strainer until the water runs clear.
  2. In a medium saucepan, combine the rinsed jasmine rice with coconut milk, water, and salt. Stir well.
  3. Place the saucepan over medium heat and bring to a gentle boil, stirring once to prevent sticking.
  4. Reduce heat to low, cover the saucepan, and simmer for 15-18 minutes without lifting the lid.
  5. Remove from heat, leave the lid on, and let it sit for 5 minutes to finish cooking.
  6. Fluff the rice with a fork and fold in the pineapple and lime juice.
  7. Sprinkle the toasted shredded coconut over the top.
  8. Serve warm, chilled, or at room temperature as a side dish.
