Ingredients
  

  • 1 cup fresh or frozen pineapple chunks
  • 1 cup coconut milk canned or carton
  • 1 ripe banana
  • 1/2 cup Greek yogurt plain or vanilla
  • 1 tablespoon honey or maple syrup optional
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded coconut unsweetened
  • Ice cubes optional, for a thicker smoothie

Method
 

  1. In a blender, combine the pineapple chunks, coconut milk, banana, Greek yogurt, honey or maple syrup (if using), vanilla extract, and shredded coconut.
  2. Blend on high until smooth and creamy. If you prefer a thicker consistency, add a few ice cubes and blend again.
  3. Taste the smoothie and adjust sweetness if needed by adding more honey or maple syrup.
  4. Pour the smoothie into glasses and garnish with additional shredded coconut or a pineapple slice if desired.
  5. Serve immediately for the best flavor and texture.
