- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, crumble well-drained firm tofu and add plant-based milk, nutritional yeast, garlic powder, onion powder, turmeric, paprika, salt, and black pepper. Mix well until creamy.
- Heat a tablespoon of oil in a skillet over medium heat. Add mixed vegetables and sauté for 5 to 7 minutes until tender.
- Fold the sautéed vegetables into the tofu mixture until well combined.
- Grease a 9x13 inch baking dish and spread the tofu and veggie mix evenly. Layer frozen tater tots on top.
- Bake for 30 to 40 minutes until the tater tots are golden brown and crispy.
- Allow to cool for about 5 minutes before serving.
- Garnish with fresh herbs if desired and serve warm.
