Method
 

Steps
  1. Finely chop your choice of vegetables and pat them dry.

  3. Warm tortillas in the microwave for 15-20 seconds to make them pliable.
  4. Spread cream cheese mixture over each tortilla, leaving a half-inch border.
  5. Sprinkle chopped vegetables over cream cheese layer.
  6. Roll the tortillas tightly and secure with toothpicks if necessary.
  7. Wrap each roll in plastic wrap and refrigerate for at least 2 hours.
  8. Slice into pinwheels and serve on a platter.
