- Wash and dry the lemons. Zest them and juice them, removing any seeds. Set aside.
- In a saucepan, combine lemon juice, zest, sugar, and water. Stir until sugar begins to dissolve.
- Heat over medium, stirring constantly until sugar dissolves, then bring to a gentle boil. Reduce heat and simmer for 30-40 minutes.
- Perform the cold plate test to check thickness. If necessary, simmer longer.
- Cool for a few minutes, then pour into sterilized jars, leaving headspace. Seal and cool completely.
